There is a demolition derby style event in one of the Adventure Journals. It might be worth checking out for inspitartion, if nothing else. I don't have the book to hand, but I think the it was in the Classic Adventures Vol. 4, in an adventure called 'Enemies for Life'.
I think it was more of a 'last man standing' event, rather than a race, but did have a selection of vehicles with different strengths and weaknesses.

Mine ended up being somewhat of a 'Last Man Standing' as well as a race. The PCs ended up wiping out all of the other vehicles, then made it appear that they weren't conspiring together (faux shots from the larger vehicle at the smaller), and the smaller, faster ship ended up winning the race. So there were technically two standing at the end (both PC vehicles), but only one that actually won the race.

How did they make it look like there was no conspiracy? Surely others saw the entire group together before the race, and when both 'vehicles were in the race saw those people and put 2 and 2 together?

Upset gamblers could lead to an interesting encounter. Especially if there's some gambling syndicate involved!

Exactly. The chance for many to have noticed that this team was 'working together' (cheating) are great new plotlines.

Perhaps a hutt who had his major domo watching likes their ingenuity and wants to recruit them to 'run the same gag' in another race, he wants to win to deny a fellow hutt the glory?

Perhaps a crime syndicate had one of the other teams in the race, and after reviewing footage picks up on what the PC's did and swears out a bounty on them.

Perhaps an Imperial did the reviewing, and gets intrigued in WHY the party was so damn set on winning that trophy...

All good ideas, but the PCs were pretty careful not to interact where anyone could see them.

The ones who gambled on the race were also not the ones seen racing (or did so through proxies).

As for how they conspired, the bigger ship fired at the smaller one each lap as it came around, so it would not seem like they were allied.

I like that, good cleaver role playing on the part's part. Especially if they truly were careful to keep the 2 groups separated while preparing for the race etc. To me that deserves getting positive reinforcement. Especially when so often a part is, even in little ways, at odds with the members.

Plus, in the heat of a race, a shot, with a 1 (the dreaded Harris) in the wild dice could have messed up the plan ...

Exactly. Due to a scale difference, the player didn't think there was any danger, but when they rolled a 6 on the Wild Die (attacking their friends), there was at least a moment of wonder (but it didn't end up doing enough to damage the larger vehicle).

Still, there was the element of danger.

Like you said, they worked hard and devised a clever plan, so I'm not likely to sting them for it.
