Chello!
Just curious...does anyone know if they give the stats to play Yuzzem (from Splinter of the Mind's Eye) in any of the d6 products?

To my knowledge there were no official D6 stats made for the Yuzzem. There were stats made for the D20 game, and those were presented in the supplement Geonosis and the Outer Rim Worlds. D6 conversions of those stats can be found in the fan made supplement Aliens Stats which there are links to in the PDF thread under tools.
