One of my players has the Gambling skill and likes to enjoy a few games of Sabaac while the party has down time.

Is there a standard amount that you win for the Gambling skill?

At the moment I just award her with whatever the difference is between her roll and highest roller participating.

So if she wins by 17 she wins 17 credits, if she loses by 17 then she loses 17 credits. In more high-class cantinas or even private Sabaac clubs I'll multiply that by 10 (170cr), or even 100 (1,700cr).

Does anyone have an alternate method?

If you want to make it a little more exciting, but still keep it very simple, the character could just bet whatever he wants (or what the adversary proposes) and then they make opposed rolls. Winner takes all.

I have done either way and also made several rolls for each hand, this allows the player to back out or raise the pot. That way they can get a little more involved in the game.

I know it's not Sabbac but poker dice work well and are fairly cheep. This way you can have players experience the "luck of the cards" and apply their gambling roll as some sort of modifier.

I've had players roll behind a screen, and make bets against the NPC. Applying both participants gambling skill for bluffing and reading their opponent.

That's actually an excellent idea. I sometimes take 10-15 minutes or so in the middle of sessions to prepare the next 'chapter', take notes, etc. While I'm doing this my players usually take it as down time and RP amongst themselves, asking questions, coming up with theories about the villians, or trying to solve mysteries that I've given them or making skill rolls to sell or purchase equipment.

Trips to the cantina are popular about time...

This method could easily kill a few moments while I prep the next section.
