Can you elaborate? What stats are invalidated?

Which does remind me, we also need a Clone Wars comprehensive guide.

You forgot to list the crew skill for this. In fact, I think this is the case for all the stats you posted.

Didn't forget them. Didn't make them. They are just benchmarks. A GM will create the skill levels as appropriate for his game. Just seemed a silly nuisance to me to bother including them.

True. Whether this cap (or freighter) is crewed by generic 4d piloting/gunnery npcs, or has a crack elite team at 7-8d, is up to the story.
